November 2024 Signature Series

2021 SS Cabernet Sauvignon

Grilled Octopus Ragout with Fingerling Potatoes, Pearl Onions, Tomatoes & Oregano

This red blend pairs brilliantly with grilled octopus ragout, where the rich, charred flavors of the octopus harmonize with the wine’s fruit and spice. The sous vide fingerling potatoes and pearl onions add a delightful earthiness, while the tomatoes and oregano bring freshness that complements the wine’s aromatic profile.

Overall, this bottling is a well-crafted wine that offers both depth and elegance, making it a versatile choice for pairing with a variety of dishes or savoring on its own.

Sommelier Notes:

Sommelier Review: Tablas Creek Clone Red Blend

This exquisite bottling from a vineyard planted to the TablasCreek clone at 1,500 feet showcases a captivating blend of aromas and flavors that evoke the character of a fine Cabernet. On the nose, expect an enticing medley of pepper, cocoa, anise, and dried berry that sets a sophisticated tone.

On the palate, charred plum and berry flavors come to the forefront, beautifully complemented by notes of bay leaf and anise. The wine features squeaky tannins that provide a pleasant texture and rise gracefully on the finish, enhancing its complexity.
