The 2020 CS Cabernet Sauvignon pairs beautifully with Baked Cambazola Cheese and Dark Cherry Compote. The wine’s rich flavors of boysenberry and blackberry complement the creamy, tangy cheese, while its notes of lavender, mint, and sweet oak enhance the complex flavors of the compote. The soft tannins and lingering finish balance the richness of the cheese and crostini, with the wine’s subtle herbal and fruit characteristics adding depth to the pairing.

75% Cabernet Sauvignon, 11% Malbec, 9% Cabernet Franc, 5% Merlot
Aged for 24 months in French, American and European oak barrels (39% new).
Blackberry, boysenberry and cassis fruit with hints of eucalyptus, anise, olive and sweet oak before a long velvety finish.
