| Tasting Notes: | Harvested at an average of 23.2° Brix on August 16th, a small percentage of whole-cluster pressing minimized the contact of the juice with the astrigencies found in the skins and seeds. After pressing, the wine was fermented and aged for 11 months in small French oak barrels, adding soft nuances of vanilla and oak to the vibrant fruit characteristics of the grape. Approximately 40% of the wine went through malolactic fermentation, providing a crisp, but smooth and delicate finish. |
| Vineyard Notes: | The 2008 growing season followed a winter of average rainfall in the, Temecula Valley. However, periods of “extreme” cold during bud-break resulted in a slightly smaller than average crop with many varietals. A mild summer made for ideal growing conditions, leading to near perfect harvesting conditions relative to grape chemistry and berry size for the white varietals even though harvest took place approximately ten days earlier than usual. Red varietals ripened beautifully beginning in mid-September through mid-October and showed great concentration, structure and color. |
| Winemaker Notes: | Our 2008 Chardonnay was harvested by hand on August 16th from two select vineyards. Benefiting from French oak barrel fermentation and sur lie aging, the concentrated aromas and flavors of apple, citrus, and spice are framed by a small percentage of malolactic fermentation, further softening the wine’s natural acidity before a balanced and generous finish. |
