Our 2007 Cabernet Sauvignon offers rich boysenberry and black currant layered with soft notes of lavender, eucalyptus and spice. Aged for 19 months in small French and American oak barrels, this blend of 87% Cabernet Sauvignon, 5% Cabernet Franc, 4% Merlot and 4% Petit Verdot is well-balanced and complex, with a soft lingering finish.
The 2007 growing season followed one of the driest winters on record, resulting in a slightly smaller than average crop with most varietals. Bud break in early spring was followed by a midsummer heat spell which saw temperatures exceed 105° Fahrenheit with excessive humidity for nearly two weeks sped up sugar levels on the white varietals, which were harvested in mid-to-late August. Despite several scattered thunderstorms, a mild September allowed extended “hang time” for the reds, further developing color, flavor and tannin structure and resulting in wines of tremendous aroma and flavor profiles, outstanding color and depth.
Our 2007 Cabernet Sauvignon was fermented in small lots in a combination of stainless steel tanks and small open-top fermentation bins. Daily “pump-overs” and “punch-downs” allowed for maximum color and flavor extraction without bitter tannins. After pressing, the wine was transferred to small French and American oak barrels where it aged for 19 months before blending.
