The 2007 Galway Vineyard Chardonnay was aged in small French oak barrels for 12 months, lending spice and oak elements to the rich citrus and melon qualities typical of this vineyard, creating a wine which is big, complex, balanced and exciting.
Los Caballos Vineyard
Our 2007 Vineyard Selection Chardonnay was hand harvested and whole cluster pressed, bringing out the fruitiness of the grape while minimizing bitter extraction from the seeds and stems. After settling, the juice was moved by gravity to 60 gallon French oak barrels where fermentation and ageing took place. Weekly stirring of each barrel during the first six months re-introduced the lees to the wine, lending a rich creaminess and complexity to the wine.
